Serves 2.
2 lean beef rib eye steaks
1 1/2 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp ground pepper
1 Tbsp extra-virgin olive oil
3 garlic cloves, minced
2 Tbsp crumbled feta cheese
Mix oregano, basil, salt and pepper in a bowl. Sprinkle and rub mixture into both sides of steak. Combine the oil and the garlic in a large nonstick skillet. Cook over medium heat for about one minute or until garlic starts to sizzle.
Add steaks to the skillet and cook for about 5 minutes on each side for medium rare. Remove steaks and sprinkle with feta cheese. Goes really well with mashed potatoes (also sprinkled with the feta!)
