Down Home Easy Coffee Cake

1 (8 oz) pkg cream cheese, softened

1 c. sugar

1 c. butter

1 3/4 c. all-purpose flour

2 eggs

1/4 c milk

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp vanilla

1/4 tsp salt

1/2 c. raspberry preserves

 

In large mixing bowl, beat cream cheese, sugar, butter with electric mixer on medium speed until fluffy.  Add half of flour, all of the eggs, milk, baking powder, baking soda, vanilla and salt.

Cayenne Rubbed Chicken with Avocado Salsa

Coarse salt and ground pepper

1/4 tsp cayenne pepper

2 boneless, skinless chicken breast halves

2 Tbsp olive oil

1/2 a medium red onion, finely diced (you can use more, but this generally is enough)

2 Tbsp fresh lime juice

1 Hass Avocado, pitted and cut into chunks

Recipe: Mediterranean Skillet Steaks

Serves 2.

 

2 lean beef rib eye steaks

1 1/2 tsp dried oregano

1 tsp dried basil

1/2 tsp salt

1/4 tsp ground pepper

1 Tbsp extra-virgin olive oil

3 garlic cloves, minced

2 Tbsp crumbled feta cheese

One bunch of asparagus, tough ends removed.

 

4 Tbsp butter
